Together we prep, season, and cook a full dinner using plants we gathered along with local ingredients I bring in for the day. Expect thoughtful technique, fermentation basics, wild aromatics, knife work, and flavor-building without the need for open flame. This is a calm, grounded, full-day immersion into wild food, native ecology, and the craft of transforming simple ingredients into a meaningful meal.

Spend a full day learning the edible plants of Hawaiʻi and transforming them into a forest-inspired dinner inside my jungle workshop. This is a deep, immersive experience for anyone who wants to understand wild food from the ground up — from identification in the field to preparing a meal rooted in the flavors of the land.

We begin the morning on the trail, moving slowly through the forest as we identify edible species, medicinal plants, invasives, and their toxic lookalikes. You’ll learn how to read the landscape, recognize plant structures, and understand how these species fit into Hawaiʻi’s ecology and food story. After the hike, we head into my jungle workshop — an outdoor kitchen tucked in the trees — where we turn that knowledge into a hands-on cooking session.
